Macarons ... macarons







At the end I could not resist and after consultation with dozens of different recipes I I tried to make ... what? but yes the famous .... Macarons.

halving this recipe I used because it was a first test:

220 gr icing sugar
120 gr almond flour
90 grams of egg white
30 grams of sugar
a pinch of salt
2 to 3 drops of lemon

A couple of days before we must prepare the egg whites separated from yolks and leave them in a glass container covered with foil in the refrigerator. Six hours before you use them you must remove from the refrigerator and leave at room temperature.

At this point, stir well with a food processor, operating intermittently, sugar icing and almonds, then sift it.

Meanwhile whip the egg whites with a pinch of salt 2 / 3 drops of lemon juice and sugar to incorporate the term. At this point if you want you can add food coloring or flavoring you choose.
Now you can incorporate the almond flour with icing sugar to egg whites in 3 or 4 times and mixed well after each addition. After the mixture has to "do the tape" that is falling like a ribbon from the spatula.

Pour all in a sac-a-few and disc formats on the baking sheet covered with parchment paper, leaving a gap of 3 cm from each other. Let stand for at least an hour before baking at 150 degrees for 13 minutes (convection oven).

Once cooked, slide the macarons still attached to the parchment paper on a cold surface to facilitate the posting. Let stand another hour.

For the filling, there are very many recipes depending on the tastes and colors used for the "shells" I have prepared a white chocolate ganache flavored with cinnamon.
As a first experience I must say that they have not been bad but next time I must remember to turn the pan so that everyone take the same heat: in fact, the inner one is a bit 'cracked! but the famous crispy leg swollen and the shell have succeeded!

Cake "Snow crystals"

My cake snow crystals over!! but much work are satisfied in the end is the first fully designed and created by me.
I wanted even more sugar paste cake but I have not used the cream in butter (I used apricot jelly instead) the company was a bit 'more difficult. However
.............. now I can say ............ I won the first premiooooo!
It 's true that the other eight cakes were not as elaborate but it is still a satisfaction.

I prepared this cake at a contest organized in the country of my sister on "The cake most beautiful and most delicious cake."
I thought of making a sponge cake of 17 cm in diameter and with the note farcilo English Lemon Curd lemon cream and lemon bath.
Here are the stages where I cut the sponge cake in 5 disks, and then filled with cream.

The theme that I thought the cake is that of snow crystals and a few days before I started to prepare them with royal icing copied from glossy paper placed under a sheet of parchment paper.

Here is a new version of tiramisu cake in the form of: I used the circle of twenty centimeters and having settled on the bottom of the Chocolate giuanduia (previously dissolved in a water bath) with the cookies "digestive" I placed the biscuits crumbs alternately with the cream for 3 laps to finish up and level with the remaining cream.

The Tiramusù has always been my favorite dessert, this time I wanted to try the recipe view Blog Sandrina and I must say it came really good ... the only difficulty was to cut the slices.
