At the end I could not resist and after consultation with dozens of different recipes I I tried to make ... what? but yes the famous .... Macarons.
halving this recipe I used because it was a first test:
220 gr icing sugar
120 gr almond flour
90 grams of egg white
30 grams of sugar
a pinch of salt
2 to 3 drops of lemon
A couple of days before we must prepare the egg whites separated from yolks and leave them in a glass container covered with foil in the refrigerator. Six hours before you use them you must remove from the refrigerator and leave at room temperature.
At this point, stir well with a food processor, operating intermittently, sugar icing and almonds, then sift it.
Meanwhile whip the egg whites with a pinch of salt 2 / 3 drops of lemon juice and sugar to incorporate the term. At this point if you want you can add food coloring or flavoring you choose.
Now you can incorporate the almond flour with icing sugar to egg whites in 3 or 4 times and mixed well after each addition. After the mixture has to "do the tape" that is falling like a ribbon from the spatula.
Pour all in a sac-a-few and disc formats on the baking sheet covered with parchment paper, leaving a gap of 3 cm from each other. Let stand for at least an hour before baking at 150 degrees for 13 minutes (convection oven).
Once cooked, slide the macarons still attached to the parchment paper on a cold surface to facilitate the posting. Let stand another hour.
For the filling, there are very many recipes depending on the tastes and colors used for the "shells" I have prepared a white chocolate ganache flavored with cinnamon.
As a first experience I must say that they have not been bad but next time I must remember to turn the pan so that everyone take the same heat: in fact, the inner one is a bit 'cracked! but the famous crispy leg swollen and the shell have succeeded!
